Now I have a little trick to share with you, how to ripen bananas in an hour! Banana cake is one of my favourite types of cake, however, I’m not one for planning well in advance, and if I want banana cake, I want it now, not in a few days, now! But whenever you go to the supermarket you’ll always come across green bananas, nowhere near ripe enough to work with. Well fear not my friends, here I give you a solution to solve the “I need banana cake this instant and cannot possibly wait for these bananas to ripen themselves” problem.
When you take them out of the oven, they’ll look a little worse for wear, but stick with it, on the inside they are soft, sweet, and ripe, which you’ll see when you open them up, not burnt at all, but lovely ripe bananas! The heat stimulates the ripening process by activating the sugars, much like a natural process just tonnes faster!

Preheat the oven to 150C / 300F / Gas Mark 2
Place as many bananas as you require on a baking tray - it's best not to use completely green bananas, we want yellow for this, bananas that are on their way to ripening but need a little kick!
Put the bananas in the oven for an hour
Leave them to cool a little before opening them up and using - to speed things up, put them in the fridge
